This is a dish that is absolutely so full of flavor and taste and comes from my daughter, Kaitlyn's kitchen. I'd actually never had halibut before, which shocked her. "I have to make you my favorite thing," she said. Later that week all of us were at her house for dinner and YES, I was amazed. She actually had two extra pieces which she offered to me and I went home and made this the following night for dinner and then the next day for lunch. It truly is that GOOD!

Rice noodles break down much more quickly then wheat noodles do. The first time I made the Lasagna noodles, they absolutely broke apart because I had overcooked them. Usually I just eye ball things when cooking but with rice noodles, you have to be precise. Once I actually followed directions, it worked beautifully!

Swedish Meatballs

1 Pound Ground Beef 1 Pound Ground Sausage 1/3 Cup Dried Cherries 4 Pieces Gluten Free Bread 2 Eggs 1 Tablespoon Kocher Salt Ground Pepper 1 Teaspoon Cayenne Pepper 3 Tablespoons Butter 1/3 Cup Gluten Free Flour 3 Cups Water 1 Tablepoon Gluten Free Beef Broth Concentrate 1 Cup Sour Cream 3/4 Cup Sherry |

In a food processer, mix together Bread and Dried Cherries until mixed thoroughly Transfer to large bowl Add Meat, Eggs, Salt and Cayenne Pepper and Pepper Mix with hands until all ingredience are evenly distributed Roll int 1 inch Meatballs Place on Baking Sheet and Bake at 350 degrees for 20 minutes In Dutch Oven, brown the butter and blend in flour creating a roux Add Beef Broth Concentrate and Water and bring to boil until thickened Add Sour Cream and Sherry Add Meatballs to Sauce, Cover, and back for an additional 25 Minutes in 350 degree oven Serve with Gluten Free Noodles or Rice |
This is one of my husband's favorites. Although it seems to have many steps, it really doesn't take much time as you make the sauce as the meatballs are cooking. This also makes a TON of meatballs so I often freeze half of the Meat once prepared for later use. I serve this with a very light salad on the side - usually a bit of Arugulla topped with a little Blue Cheese, Olive Oil and Kocher Salt and you're good to go.
Lemon Thyme Chicken Tenders

This is a great appetizer or main dish recipe. It makes a ton of meatballs and is a real crowd pleaser. You can also make the meatballs without the sauce and add to Spaghetti for Spaghetti and Meatballs. Freezes well too!

Lamb Peach Corn Quesadilla

I made this recipe the other night trying to use left over lamb chops. My kids LOVED it. They said it was like eating dinner and dessert all at once. A big thumbs up! If you want to make it a bit spicy, you could add just a touch of chili pepper ontop of the cream cheese.
Honey Teriyaki Pork Chops
1Four Thick Cut Pork Chops (we prefer Johnson Family Pasture Pork Chops)
3 Tablespoons Butter
1/3 Cup Tamari
1/3 Cup Honey
1 Teaspoon Grated Fresh Ginger
1/4 Teaspoon Black Pepper
1/3 Cup Scallion Onion Chopped
Heat oven to 350 degrees. In a black iron slillet, melt butter. Add pork chops and cook on 4 minutes each side on medium to high heat. Place skillet in the oven for 15 - 20 minutes depending on the thickness of the pork chop (145 degree internal temperature). Remove from oven. In a small bowl whisk together the Tamari, Honey, Pepper and grated fresh ginger. Remove pork chops from pan and turn heat on low. Simmer sauce until it begins to thicken. Add pork chops back to the pan for two minutes on each side. Turn off heat and top with chopped scallions. Cover with foil and let sit for 10 minutes. Spoon excess sauce from pan onto chops before serving. Moist and delicious every time. Basmati Rice is a great accomplishment to this dish!
