My son, Danny, was diagnosed in 2009 with severe Celiac Disease. As only Danny can do, he didn't just have Celiacs, he was so off the charts with the Disease that everyone in our family was checked - and checked immediately. To the relief of my middle daughter, and her fear that she'd have to give up Jimmy John's forever, everyone else was negative. I felt so fortunate though, once getting the diagnosis, that we had done a great deal to eliminate gluten from our household. When I met my husband seven years prior, he was gluten free. Although not diagnosed, he just figured out that he felt better without gluten in his diet. At first I made dinners for him and dinners for everyone else, but as life got busier, I no longer had the time nor the energy, to keep this up. When a recipe could be altered to gluten free, I did it. I learned what worked, often by learning what didn't, and over the years I had a repertoire of recipes that were crowd pleaser to us. I was often asked for my recipes and, after approaching my computer savvy daughter Kaitlyn about helping me with creating a blog - "Oh my gosh, Mom. There super easy. I've made three since last year!" I had the confidence that I could navigate through with her help. And that is the story, my story, as to how the Gluten Free Gourmet came to be and became me.
