This is a hearty side dish and any mushrooms will do. If you want to try an onion version instead, simply remove the Mushrooms and substitute with 1 cup chopped Yellow Onion. Cook as above. The only downside of Risotto is that you have to "babysit" it a bit as it cooks, but for a thirty minute commitment, it's well worth the wait!

I don't know why, but even as an adult. if I thought of Brussel Sprouts, my immediate response was "Yuck!" It wasn't until we were out to dinner with two of my husband's reps that I drastically changed my tune. One of the reps ordered Brussel Sprouts for the table. Once the waiter had taken the order and left the table, the other rep said to the first, "When I said order any side dish, I didn't mean those!" The first rep laughed and said "Just wait." My thought, "I won't hold my breath!" When they arrived, I tentatively tried the one half of the ONE Sprout I'd placed on my plate. I have to admit, it was delicious. Ever since, we've been making them at home. Even our more fussy eaters like them. If you haven't given Brussel Sprouts a try recently, you owe it to yourself to do it. They truly are tasty and super good for you!
Garlic Lemon Brocolli

- 2 Large heads Brockolli, Chopped
- 1/3 Cup Olive Oil
- 3 Garlic Cloves, Minced
- 1 Tablespoon Kocher Salt
- 1 Teaspoon Ground Black Pepper
- 1 Tablespoon Fresh Squeezed Lemon
Directions
- Place Brocolli in Large bowl
- Add Olive Oil, Garlic, Salt and Pepper
- Mix thoroughly
- Place on Silicon Sheet over Baking Sheet
- Bake at 400 degrees for 25 Minutes
- Remove from Oven and evenly spread with Lemon
- Serve!
My husband and I first had brocolli this way at the Mississippi Belle in Hastings, MN. We had one order and then had to have another. We had previously steamed and then sauted in Black Skillet BUT this version is SUPER easy and with so many fewer dishes. Fresh and so dang good for you!
Artichokes

Growing up in California I was spoiled by having artichokes often. I realized that this was one thing I couldn't do without when my 6 week summary from my Simon's Delivers Grocery Service noted that I'd ordered 48 artichokes. in that review period - a testament that my kids love them too. This is such an easy way to prepare artichokes, guaranteeing that they are tender and flavorful. For those who have never had an artichoke before, the best part is the heart. Once all the leaves are eaten (and you only eat the bottom portion of the leaf), remove the "prickly" center of the Artichoke, done best by simply carving out with a spoon, you then have the heart. Salt and dip and ...heavenly!
Cole Slaw - Simple but Awesome!
1/2 Green Cabbage
1/2 Red Cabbage 1/3 Cup Red Onion 6 Carrots |
1 Cup Dried Cranberries
1 Cup Mayonnaise (not Miracle Whip) 3 Tablespoons Cider Vinegar 1/3 plus 1 Tablespoon Raw Sugar 2 Teaspoons Kocher Salt 1 Teaspoon Pepper |
In a food processor with the shredding attachment, shred carrots and Onions. Switch the blade to slicing attachment and slice cabbage. Place cabbage, carrots, onion and dried cranberries in large bowl In a separate bowl add mayonnaise, vinegar, sugar, salt and pepper. Whisk together until well mixed (sugar will not dissolve completely at this time but will in refrigerator once it reacts with the vinegar). Pour over cabbage mixture and place in large plastic bag. Refrigerate overnight. Dressing will pool to the bottom so mix is back into the cabbage to ensure salad is evenly coated. Serve with chicken, pulled pork, ribs...anything. I sometimes just eat it solo for lunch...it is that good!
