Basil is so easy to grow in warm weather. I have a large planter of basil, along with other herbs on my deck. With just a little TLC and sun they grow abundantly! This recipe is great to make and freeze to have year round.
This is one of our favorite brunch dishes. Fritata is also wonderful with substiting ham and cheese and scallion onions or any of your favorites in place of the bacon and cheddar. Serve with fruit, gluten free toast or Lemon Zest Blueberry Bread!

Growing up in California I was spoiled by having artichokes often. I realized that this was one thing I couldn't do without when my 6 week summary from my Simon's Delivers Grocery Service noted that I'd ordered 48 artichokes. in that review period - a testament that my kids love them too. This is such an easy way to prepare artichokes, guaranteeing that they are tender and flavorful. For those who have never had an artichoke before, the best part is the heart. Once all the leaves are eaten (and you only eat the bottom portion of the leaf), remove the "prickly" center of the Artichoke, done best by simply carving out with a spoon, you then have the heart. Salt and dip and ...heavenly!
