Cupcakes always make you feel better and these are absolutely amazing. I have found that most baking can be altered to the gluten free flour with adding an extra egg to bind the mixture more effectively. These seriously are to die for! All of our kids gave these a thumbs up - and even my husband who doesn't even like dessert!

This cake made it's grand debut at our last Easter and will be a standard for us from this point forward. Very, very rich and serves 16.
White Chocolate Raspberry Cheesecake with Dark Chocoloate Cookie Crust
So yes, there are a lot of steps but this cheesecake is well worth it. It is rich and luxerious! If you'd rather skip making the rasberry sauce homemade, you can substitute with 1/2 Cup Rasberry Syrup.

Beat Coconut Oil until smooth Add Sugar and beat for two more minute on high Add Eggs and continue to beat. Add Flour, Baking Powder, Salt and Vanilla Beat for three more minutes until smooth Fold in Chocolate Chips Preheat oven to 325 degrees Bake for 10-12 minutes Serve! |
I made these cookies one night to take to our annual birthday bowling bash. The next morning my husband sheepishly said to me that he thought I might need to make another batch. Luckily I'd stashed a few in the cookie jar but these cookies truly are to die for. It's kind of like a macaroon but even better!
Vanilla Wafers

1/2 Cup Butter, softened 2/3 Cups Raw Sugar 1 Egg 1 Tablespoon Vanilla Extract (use good Vanilla, it matters!) 1 Cup Gluten Free Flour 1 Cup Almond Flour 1 Teaspoon Baking Powder 1/4 Teaspoon Salt |

Preheat oven to 350 degrees. Place silicone mat in baking sheet. In mixer cream butter and sugar together. Add egg, vanilla and milk and beat until smooth. In separate bowl add flours, baking powder and salt. With mixer on low, slowly add flour into butter until mixed. Place dough in baggie and place in refrigerator for 30 minutes. Remove. Add 1" balls onto silicone mat. With the bottom of a glass, flatten to 1/8 inches. Bake for 18 minutes. Remove and cool. |
Marble Cheesecake
Ingredients:
1 Cup Raw Sugar 1/4 Cup Cocoa 2 1/2 Teaspoons Vanilla 3 Packages Cream Cheese, softened 1/2 Cup Sour Cream or Creme Fresh 3 Eggs 1 Tablespoon Vegetable Oil 3 Tablespoons Gluten Free Flour Chocolate Crumb Crust: 1 Recipe of Vanilla Wafers (above) 1/3 Cup Cocoa 1/3 Cup Confectioners Sugar 1/2 Stick Butter Melted |
Directions:
Preheat oven to 350 degrees. Add Vanilla Wafers (above) with 1/3 Cup Cocoa, 1/3 Cup Confection Sugar in a food processor. Pulse until combined. Drizzle 1/2 still melted butter into mixture and again pulse until combined. Grease sides and bottom of springform pan. Place mixture in spring form pan evenly on bottom and 1/2 way up sides. Take the bottom of a cup or glass and pack down crust. Bake for 8 minutes, remove and completely cool. Turn oven to 450 degrees. In a mixer add cream cheese, 3/4 cup sugar and Vanilla and mix until combined. Slowly add flour and mix in. Add eggs one at a time beating after each egg to incorporate. In separate bowl mix oil, cocoa and 1/4 cup sugar until combined. Add 1/2 of the cream cheese recipe to the cocoa recipe and blend. Alternate spoonfuls of cocoa and plain cream cheese mixture over crust. Take spoon and swirl top to create marble look. Place in oven for 10 minutes. Without opening oven, reduce heat to 250 degrees and bake for an additional 30 minutes. Again, without opening the oven, turn the oven off and let bake for another 30 minutes. Remove, cool and refrigerate overnight. |
I just made this for my husband's oldest daughter's birthday and it was a big hit. Even 2 year old Henry gave it a thumb's up!
Carrot Cake with Grand Marnier Frosting

4 eggs 1 1/4 Cup Vegetable Oil 2 Cups Raw Sugar 1 Tablespoon Vanilla 2 Cups Gluten Free Flour 2 Teaspoons Baking Soda 2 Teaspoons Baking Powder 1/2 Teaspoon Salt 2 Teaspoons Ground Cinnamon 3 1/3 Cups Grated Carrots 1 Cup Chopped Walnuts (Optional) 1/2 Cup Butter, Softened 8 Ounces Cream Cheese, Softened 4 Cups Confectioners Sugar 1/3 Cup Grand Marnier |
Directions
Preheat oven to 350 degrees. Grease two 9" round pans. In a mixer, beat together eggs, oil, sugar and vanilla on high for two minutes. In a separate bowl mix together the flour, baking soda, baking powder, salt and cinnamon. Mix slowly into oil sugar mixture. Add carrots and walnuts (non nut lovers can leave out). Mix on low (batter will be very thick). Pour evenly between pans and bake for 45 minutes. Cool in pan for 10 minutes and then to wire rack until completely cool. Mix together butter, cream cheese, confectioners sugar and grand marnier until thoroughly blended. Ice top of first round. Add second round and ice sides and top. |
This cake is absolutely delicious and decadent! It will last in the refrigerator for up to 10 days and still incredibly moist on day 10!
