Salad is a big staple in our house. I think it was what our kids craved most when they were away at from college. I do also remember my college days when salad was not so highly rated. Anyone in their late forties, early fifties can remember what used to be called salad - chopped head lettuce with crescent moon tomato slices. The tomatoes were generally more orange than red and dressed with either greed goddess or some other over-vinegared oil and vinegar concoction. A mixture of soup and non descript flavor. As a young adult, I became much more progressive with thinking outside of the standard house wedge salad. With a much greater variety of lettuce to choose from, I began to experiment with fruits and cheeses and nuts to combine flavors that added so much more complexity. I realized that most of the salads that I have had were generally really overdressed. I came to fine the beauty of a salad with multiple flavors topped with a light olive oil, and not too much olive oil. Top too with a little bit of salt and voila, a masterpiece. I also learned to cut tomatoes in cubes, not crescents! My daughter Jordan and I, along with my parents, traveled to Croatia a few years back. The salads there were amazing. With all homegrown vegetables, vibrant in taste and color, we literally had salad until it was coming out of our ears. Jordan recalls that it was one of the best things she had ever tasted, which was hard to argue!
