This is such a fresh summer dish - and it goes with everything OR just as an appetizer on it's own. We'd consider this an appetizer and not a salad because in our family we'd make this for dinner, and it would be gone long before dinner is served. Best with freshest of fresh veggies and cheese!

I still remember the first time I had this great appetizer at my best friend's house over the Holidays when I was in seventh grade. Ky Wilkerson was a great cook and I think her dishes were just a bit better than any other because she put so much love into whatever she made. Love, love, love this appetizer. Served at my Dad's recent 80th birthday and again the bowl was pretty much licked clean!

Thai Summer Rolls

To ASSEMBLE Using a Silicone cutting board as a work surface, dip pliable rice paper and place on board. Lay 3 shrimp haves acronse top 1/3 of round. On bottom 1/3 of round, place 1/10th of the Noodles, Carrots, Cucumbers, Onions and Cilantro. Bring bottom edge of round up over the noodles and vegetables and begin to roll tightly, truning right and left sides into roll. Continue to roll up over the shrimp until round is completely rolled. Make sure to tuck tightly on the first roll up from the botttom and on both sides. Place roll (seam side down) in a 9 x 13 or larger baking dish. Continue until all 10 rolls are made and cover with damp paper towel. When ready to servce, cut with a sharp knife into halves or thirds and serve with dipping sauce. |
My Mom brought these for dinner and they were all gone instantly. My Mom is the best cook I know and never shies away from a difficult undetaking. These rolls clearly were an act of love with a lot of steps and ingredience but OH SO Good. The fresh Cilantro and Shrimp are amazing together coupled with the spicy sauce. As an alternative, you can substitue the shrimp for shredded chicken or for a vegetarian approach, you can substitue the meat with fresh mango slices with mine instead of the cilantro.
